Eden whisky is distilled, crafted, matured  and bottled in Hobart,Tasmania.

Our whiskies are shaped by Tasmania’s clean air, cool climate and the steady patience of slow maturation.

One of Eden’s defining elements is water. It is not simply an ingredient. It is part of the story of the spirit.

Our approach blends traditional distilling methods with thoughtful innovation. Each release is guided by balance, restraint and clarity, allowing the landscape to speak through the whisky rather than overpower it.

Eden was founded by Dale and Claire Williams with a vision to create a whisky that reflected both Tasmania’s environment and its people.

In 2026, that vision entered a new chapter with the arrival of Jason as owner and custodian of the Eden brand.

Jason brings a deep respect for the original philosophy, along with a commitment to craft. Under his guidance, Eden will honour its origins while quietly evolving toward its future.

Eden whisky is about care and allowing time, place and people to shape something meaningful.
